Substitutions

For much of the year, we are selling seed that is still in the ground. You can pre-order based on our conservative harvest estimates. If the actual harvest is less than our estimates, we can usually find a similar strain to substitute within the same varietal group, so please check YES to “May We Substitute?. If you select NO we will send a refund for any sold-out strains. An expert always considers your location, similar traits in strain, and any other strains already on your order to avoid duplicates. You are also welcome to add any notes if you have specific requests for possible substitutions, or you can request that we contact you if substitutions are necessary.

Description

Inchelium Red Garlic is an Artichoke-type softneck variety and our best-selling Artichoke for good reason. Originally discovered growing at an old homesite on Colville Tribal lands in Washington State, this vigorous heirloom has earned a reputation for producing exceptionally large, dense bulbs and outstanding flavor. It was also recognized as one of the top-rated softneck garlics in a 1990 taste test conducted by Rodale Kitchens.

Inchelium Red typically produces four to five layers of cloves, with 8–20 cloves per bulb, and bulbs exceeding 3 inches in diameter are not uncommon. Its higher soluble solids create denser, heavier bulbs than many other Artichoke varieties. Freshly harvested, the flavor can be pleasantly spicy, but it mellows during storage into a mild, rich garlic with a lingering finish. The somewhat flattened bulbs, excellent productivity, and long storage life make Inchelium Red a favorite for both gardeners and cooks.

When Will This Ship?

Orders shipping to Alaska will ship as soon as possible in September. 

All other orders will be shipped in the order which they were received beginning in mid September. If you order late (after August 1), expect your order to ship mid-October thru November.
